Curry chicken salad

This curry salad is great in a wrap, salad, sandwich, dipped with Tostitos multigrain scoops, and on its own! This quick to make dish is also an easy option for a packed lunch.

Ingredients:

  • 1 whole rotisserie chicken

  • 3/4 of a Red onion

  • 1 Apple

  • 1/3-1/4 cup craisins

  • Mayo

  • Curry powder

  • Salt & pepper

Directions:

Pull all the chicken off the bone and place to the side. Either use your hands to thoroughly tear the meat, or use a large knife to chop into small bits. (Don’t forget to pick the meat off the bottom of of the chicken!) Place the shredding chicken in a large bowl.

Very thinly slice 3/4 of the red onion, then fine chop it the other way. Cut 1 whole apple the same way. Add the chopped onions and apple to the large bowl of chicken. Add a dollop of mayo (careful, you can always add more!) and a pinch of salt and pepper. Add a sprinkle of curry powder over the top so it makes a thin blanket that you can see through still, like lace or a doily. Mix thoroughly. Add a little mayo at a time if necessary. Taste the mixture once it looks ready. You may need to add more curry powder, so be careful to only add a little at a time. Again, you can always add more, but can’t take away!
